Baking in my tiny little kitchen hasn’t gotten any easier, but I’ve been making it work! First, I made…cake that was supposed to be brownies. Oops. Then I made brownies on purpose. Yay! And most recently I made mini cheesecakes with black cherries.
Are they my best bake yet? …No. The homemade successful brownies get that title. No, this was a box mix that I spiced up with some vanilla extract and sliced cherries. But it’s a good jumping off point for future cheesecake adventures, I think. I already have real cream cheese. My only real remaining hurdle is an electric mixer. Also, Oreos. Because I want to make an Oreo cheesecake, of course. The problem here not being the search for Oreos but instead the not eating them all the moment I buy them. Because that has already happened. …More than once. #noregerts. But until I resolve this unacceptable shortage of overpriced yet much beloved electric mixers (and where exactly am I supposed to store the darned thing, too?), I’ll take pride in my successful, if slightly bland, mini cheesecakes.
…Note to self: buy a colander, too.
